The phrase “bee’s knees” was prohibition-era slang for “the best.” This classic cocktail, born from the prohibition era, combines gin, lemon, and honey. A Bee’s Knees is especially delicious with Barr Hill Gin because it highlights the notes of raw, northern honey in the gin beautifully, and is balanced with bright, tart lemon. It is also a very important cocktail to the Barr Hill family. Each year we celebrate Bee’s Knees Week, a spotlight on the importance of bees in our food and drink system.

      Instructions

      • Make honey syrup: Combine two parts honey and one part hot water. Stir until combined and let cool.
      • Before juicing your lemon, peel off a big strip of zest using a vegetable peeler, for your twist.
      • Combine Barr Hill Gin, fresh lemon juice, and raw honey syrup in a cocktail shaker.
      • Add ice and shake vigorously for 15-20 seconds.
      • Squeeze the lemon peel over the glass with the yellow side facing your cocktail to release some of the essential oils.
      • Add the lemon twist as a garnish and enjoy!
